    Think I mentioned few years ago that I saw bulgur as part of a menu in an upper scale restaurant.

    Bulgur was 'poor' people staple (an served in the canteen for school lunch ) back in the days.

    We turned up our noses at a food extremely rich in nutrients. It is a much better complex carbohydrate than white flour.

    Dasheen not as tasty as yellow yam IMO, but go ahead, put it in your soup or serve it on the side. It still good complex carbohydrate.

    BTW, the "dasheen bush" or leaf is what Trinis use to make what they call callaloo, which is like a thick soupy mixture of the dasheen leaves, okra, pumpkin, pepper and pigtail, or salt beef ...

    Dasheen(sp?)

    So I was on a T&F link featuring the Jamaican track team.

    A sub-link mentioned that the team has a chef who takes care of the team nutrition.

    I listened to the head chef...who mentioned that Dasheen was one of the food items used as complex CHO.

    I recalled we refused to eat Dasheen as kids. In fact I have not tasted it in X amount of years.

    Yesterday I was in the Farmers market and I bought a very small portion--that I have not cooked it as yet. I guess you just boil it like yellow yam.

    Will let you know what I think.
